Tilapia with White Wine Sauce

Ingredients


Wine Sauce

  • 2 tbsp extra virgin olive oil
  • 1/2 tsp red pepper flakes
  • 3 large garlic cloves, minced
  • 10 oz grape tomatoes, halved
  • 59 ml white wine (or sub for vegetable broth and 1/2 tsp white wine vinegar)
  • 12 g fresh basil, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp sugar
  • 1/2 tsp lemon zest

Fish

  • 2 tbsp extra virgin olive oil
  • 1lb tilapia (or any white fish)
  • salt and pepper to season

Instructions


    1. In a large sauté pan, warm the oil over medium heat. Add red pepper flakes and garlic, and sauté until fragrant, about 1 minute.
    2. Add the tomatoes and cook until they soften but still hold their shape, about 5-8 minutes.
    3. Stir in the remaining wine sauce ingredients and let simmer for about 2 minutes. Adjust seasoning to taste.
    4. Transfer the sauce to a bowl and set aside.
    5. In the same pan, heat 2 tablespoons of oil over medium heat. Pat the fish dry and season both sides with salt and pepper.
    6. Place the fish in the pan and cook for about 3 minutes per side, adjusting the time based on the type of fish used.
    7. Pour the sauce back into the pan and let it warm through for 1 minute.
    8. Serve hot with your choice of sides.
