Feast of Annunciation
Tilapia with White Wine Sauce
Feast of the Annunciation of the Theotokos
Ingredients
Wine Sauce
2 tbsp extra virgin olive oil
1/2 tsp red pepper flakes
3 large garlic cloves, minced
10 oz grape tomatoes, halved
59 ml white wine (or sub for vegetable broth and 1/2 tsp white wine vinegar)
12 g fresh basil, finely chopped
1/2 tsp salt
1/4 tsp pepper
1 tsp sugar
1/2 tsp lemon zest
Fish
2 tbsp extra virgin olive oil
1lb tilapia (or any white fish)
salt and pepper to season
Instructions
In a large sauté pan, warm the oil over medium heat. Add red pepper flakes and garlic, and sauté until fragrant, about 1 minute.
Add the tomatoes and cook until they soften but still hold their shape, about 5-8 minutes.
Stir in the remaining wine sauce ingredients and let simmer for about 2 minutes. Adjust seasoning to taste.
Transfer the sauce to a bowl and set aside.
In the same pan, heat 2 tablespoons of oil over medium heat. Pat the fish dry and season both sides with salt and pepper.
Place the fish in the pan and cook for about 3 minutes per side, adjusting the time based on the type of fish used.
Pour the sauce back into the pan and let it warm through for 1 minute.
Serve hot with your choice of sides.
